Beautiful, vitamin B, magnesium-rich, protein-filled, memory-boosting bananas. Bananas are a staple in our kitchens, but what you might not know is that they are extremely versatile. From banana bread to the world’s best banana cake (trust us, it’s that good), we’ve put together 5 of our favourite banana recipes that’ll turn your frown upside down, just like our bananas.

Best Ever Banana Cake with Cream Cheese Frosting

There’s banana cake, and then there’s this banana cake. True to its description, this really is the best ever banana cake. What’s the difference with a banana cake and banana bread, you may ask? In terms of flavour, there isn’t much with banana being the hero ingredient - but the texture of a banana cake is more like a cake. Texture is a big difference, and this cake is more dense and moist than banana bread, and just like most delicious cakes it also has a whole heap of sugar and fats to keep it extra moist. This recipe can easily be halved and popped into a bread tin for smaller portions. But trust us when we say, once you make this cake, you’ll never look for another banana cake recipe again.

French Crepes with Caramelised Bananas

Did someone some French crepes with caramelised bananas? Oh, yes! Learn the art of French patisserie with pastry chef Molly! Originally from Dallas, Texas, Molly, a pastry graduate of Le Cordon Bleu Paris, offers pastry classes in Versailles and around France. Her crepes recipe is as authentic as it gets! 

CREPES:

In a BIG bowl, whisk together 250g (2 cups) flour, 1/4 cup (50g) granulated sugar, and a pinch of salt.

Make a well and inside of it, whisk together 3 eggs, 2 teaspoons of vanilla, 2 tablespoons rum (optional), then add 1 cup (250ml) milk and 1 cup (250ml) water while whisking, slowly incorporating the dry mixture. You can blend the batter if you want for a smooth consistency.

Cover and Chill at least an hour or overnight!

Butter a nonstick pan and ladle in the batter to coat the pan. Then really just go for it!! If you saw in the live, it’s a lot of trial and error! But this is where the fun comes in! Swirl to coat the pan, wait for the bubbles, then flip! You can use a spatula too. All it is is practice!

CARAMELISED BANANAS:

  • 1½ cup butter(115 g)

  • 1 cup brown sugar(220 g)

  • 1 teaspoon cinnamon

  • 3 bananas, sliced

  • whipped cream, as desired

  • caramel sauce, as desired

  1. In a pan over medium heat, mix the brown sugar and butter until slightly bubbling.

  2. Add the cinnamon and bananas, stirring until bananas are evenly coated with the caramel.

  3. Remove from heat and cool.

  4. Spread half of the banana mixture on half of one crepe.

  5. Fold the other half of the crepe on top of the bananas, then fold the crepe in half.

  6. Repeat with the other crepe.

  7. Serve with whipped cream and a drizzle of caramel sauce.

One of our favourite recipes for banana bread comes from the American Test Kitchen Family Cookbook, why? It’s got all the main components of a banana bread, sugar, flour, bananas but it also adds yoghurt from a nice tank and added moisture.  You can add anything from walnuts, almonds, chocolate chips or even coconut. Keep this recipe as your staple and you can mix and match until your heart’s content.
