Six Salad Recipes to Get You Through Quarantine

Who said you can’t make friends with salad? We’re here to tell you, you can! Not only are salads full of nutrients to help boost our immune system, but they’re the perfect meal (or side meal) that takes no time at all to whip up. The result? Delicious hearty goodness. Here are a few of our favourite salad recipes to boost your health and your tastebuds!

Dakos salad

Kritikos Dakos, the most well known Cretan salad. This delicious, healthy and ultimate representation of the Mediterranean diet comes straight from Crete. 

Dakos refers to a recipe that uses the famous Cretan barley rusks (that you can find at specialised delicatessens).The rusks are made with whole grain barley flour, water and salt. A little hard to chew, but packed with nutrients, the salad is then heightened with olive oil, tomato and crumbled cheese, traditionally this cheese is Cretan mizithra, but you often see it made with feta outside of Crete. 

Similar to an Italian bruschetta, Dakos is simply just tomato, rusk and olive oil, but there are recipes that add Spanish onions, capers, and in this case Kalamata olives!

Beetroot & halloumi salad with pomegranate and dill

It’s almost impossible to resist a salad with halloumi in it, right? Get your nutrients in with this anything-but-boring salad! Pickled onions, orange segments, fresh rocket, beetroot, grilled halloumi and scattered with juicy pomegranate seeds, fresh mint leaves and pumpkin seeds! Not only nutritious, but delicious (we know, corny, but true).

With the new season of Masterchef underway, we can’t help but miss Matt Preston. Solution? One of his delicious salads to pay homage to his delectable taste! The sweetness of the plums combined with salty ricotta and ripe tomatoes gives this salad a flavourful summer bite, while it’s still warm outside!

Ultra-green chopped salad

“Eat your greens” is just what the doctor ordered. This salad is packed-full of nutrients to boost your immune system and give yourself a good energy boost. Bonus? There’s no cooking required, the bulk of the work in this salad is in the chopping. Broccoli, broccolini, mixed sprouts, baby kale, spring onions and fresh mint are drizzled with a delicious avocado puree made with buttermilk, that’ll make you want to go green almost everyday!

Waxy kipfler potatoes are char-grilled on the barbecue and then drizzled with a creamy mustard and creme fraiche dressing as the perfect accompaniment to any dish!

Roasted carrot, spelt, fennel & blood orange salad

Move over quinoa, spelt is trending the grain waves. This delicious salad featured roasted carrots, fennel, Kalamata olives and blood orange segments to accompany the hero of the dish: spelt! The salad is then drizzled with a delicious red onion vinegarette for the perfect acidic bite. You can easily serve this salad with roast chicken, crumbled feta or goat’s cheese for lunch or a light dinner.
